| These Gas and Electric tilting
kettles, with inbuilt stirers, are
manufactured by Joni, De
Danieli and
Firex. They
are all fitted with an indirect
heat source , water jacket on
Firex & Joni and an oil jacket
for the De Danieli,
- indirect heat is better for
cooking
delicate sauces, custards etc.
The oil filled jacket on the De
Danieli kettles will reach a
temperature of 190'C allowing
a hotter cooking temperature,
the water jacket models reach
115'C. All These Tilting kettles
are
heavy duty and can be
supplied with capacities from
30 to 500 litres |
