This Cres Cor Cook and Hold oven is ideal for operators operating carveries, banquets or outside event caterers, where pre-cooking and holding prior to service is required. Low temperature cooking greatly enhances the flavour, as enzymes are not broken down as in high temperature cooking. With the programmble controllers, upto 10 menus, per oven, can be pre-set freeing up valuable labour time and giving consistant cooking results.These Cres Cor units are easily mobile and have a heavy duty frame construction.   • Oven will hold 5 trays, 460 x 660mm at 75mm shelf centres. - capacity 54kg of meat per oven
  • Radiant heating system prevents product drying out and reduces shrinkage by 15 - 20%
  • Oven is controlled by an Electronic digital controller which allows 10 pre-set menus to be set
  • Supplied with core cooking probe as standard - automatically switches off the oven when food temperature is reached and will put into hold mode
  • Cooking temperature 63'C - 121'C,  Holding temperature 63'C - 121'C
  • Fitted with 18 hour timer - allows slow cooking overnight
  • Supplied with a removable grease collection tray (fitted with drain off valve) in the base of each oven
